Flavorful rice side dish. 2 cups cooked brown rice, one orange (juiced), one egg (beaten), 1/4 cup peas, carrot shredded, 1/4 teaspoon fresh chopped finely ginger root, 2 tablespoons sesame oil, one scallion diced (garnish).
In a wok or deep saute pan on high heat, add sesame oil (once hot) add carrot and cook 2 minutes (stirring), add ginger root cook one minute, add egg (scramble), add remaining ingredients and cook together (stir during cooking time) 3-4 minutes.
Serve in a bowl, add scallions. Dig in it is so good!
