These thin pancakes are so light and flavorful. I use a pre-mix batter (like Hungry Jack or Aunt Jemina mix-follow instructions for one dozen pancakes). Add juice from two fresh lemons, one tablespoon light brown sugar, one tablespoon honey, mix batter. Prepare a griddle pan with butter and ladle batter in a 4-5″ diameter. When bubbles form flip pancakes until golden brown.
Plate add syrup or honey and enjoy them!
