Orange~Cinnamon Glazed Carrots

Perfect side dish for Ham, Pork, Beef, Chicken. Its a real flavorful, easy dish to make. I use 2 pounds fresh carrots, peeled and sliced, boil for 18 minutes, drain, add 1/4 scant cup Pure Florida Orange juice, 1 teaspoon cinnamon, 2 tablespoons of honey stir well and serve. (Add a cinnamon stick or two, to garnish).

Thin Lemon Pancakes

win_20160928_10_58_07_pro-2These thin pancakes are so light and flavorful. I use a pre-mix batter (like Hungry Jack or Aunt Jemina mix-follow instructions for one dozen pancakes). Add juice from two fresh lemons, one tablespoon light brown sugar, one tablespoon honey, mix batter. Prepare a griddle pan with butter and ladle batter in a 4-5″ diameter. When bubbles form flip pancakes until golden brown.

Plate add syrup or honey and enjoy them!

Lime Baked Catfish Filets

Wonderful Catfish Filets baked with Lime, easy and flavorful. As most of you know I am not a fan of fried foods, I will bake anything first. These Catfish Filets are so tender and quick cooking. My Seafood Market often has these available. Its a family favorite using any citrus. I decided to use lime this time and they were a hit. I used 3 limes juices in a ramekin, one teaspoon sugar, garlic salt, white pepper and marinated them for 30 minutes, place them into a baking dish and baked @ 400 F for 12 minutes.

Garnish with fresh lime wedges.

I served this with wild rice and asparagus.

Lemon~Pepper Tilapia Sandwich

Tilapia will often go on sale at our local Seafood Market and I make so many recipes from this mild white fish. One favorite is a lunch Fish Sandwich. Using 4 Tilapia Filets I season them well with pre-mixed Lemon~Pepper seasoning and grill them 3-4 minutes per side. We love lettuce and tomato and tarter sauce with ours and a fresh bakery roll/bun.
