Citrus Shrimp Cocktail

A great appetizer! Two fresh Lemons, 2 Fresh Limes, juice of one lemon & one lime, slice remaining one for garnish. 16 ounces large to jumbo pre-cooked shrimp, deveined-tails on. Allow to thaw, rinse pat dry. Add to a large mixing bowl, dash of garlic salt, white pepper, onion powder, parsley flakes, juice of one lemon and one lime, stir and cover. Refrigerate 20 minutes before serving in your favorite vessel, fill with crushed ice, add shrimp, garnish with lemon and lime slice.

Lemon-Cranberry Apple Autumn Beverage

Great flavors abound this easy beverage! One lemon juice, one lemon slices to garnish, 1 cup Pure Apple juice, 2 cups Light Cranberry Juice, Crushed Ice. Combine all ingredients into a pitcher, stir and serve.

Yum very refreshing.

Mediterranean Baked Potatoes & Red Bell Peppers with Lemon Olive Oil

Scrumptious side dish! I use Yukon Gold Potatoes (5 lbs.) cut and peeled, 2 red bell peppers cut, oregano, parsley, garlic powder, 2 lemon (juice only), scant quarter cup of Good Olive Oil, s & p, to taste.

Place potatoes and bell peppers in a large baking pan, season well, drizzle Lemon and Olive Oil, cover with foil and Bake @ 400 F for 25 minutes.

Serve with any main entrée you love. We have this many times with Flounder, Halibut or Tilapia baked fish. It is a so flavorful.

Raspberry – Lemon Smoothie

Raspberries were on sale and I decided I wanted a smoothie! I love the combination of Lemon and Raspberry I added 1/2 cup of Ice, pureed and strained the raspberries (1 cup) added a pinch of sugar, 1/2 lemon juice only and blended well in my Vitamix. Voila a wonderful refreshing smoothie.
