These vegetables are such a treat in the warm months. I buy them fresh from my Produce Market. I use one lemon, one lime, one orange for just the juices, 2 tablespoons of honey, tad of white pepper and sea salt, drizzle of olive oil and mix veggies well, add to a non stick baking sheet pan and roast in the 375 F oven 30 minutes.
They will smell wonderful while roasting in the oven or grilling packets. I love zucchini, yellow banana squash, carrots, asparagus, cauliflower florets, red onion, large sliced red potatoes.
Any of your favorite veggies will do nicely and they’ll accompany any main meat option.
I think adding some citrus just enhances the natural flavors of any vegetable in my humble opinion.
