A favorite here using a box mix lemon cake/cupcake, add as per instructions (eggs, oil, etc), using a non stick cupcake tin add batter and bake as per box instructions. I make a lemon cream frosting, 2 cups confectioners sugar, dash of milk, 2 lemon juice and zest of one lemon, whip together and chill until ready to ice the cupcakes. Toast the coconut flakes lightly and garnish on top.
For some reason these just disappear!!!
