Citrus Spinach-Arugula Salad

I just adore salads this one is a favorite of mine. Using one navel orange, peel and cut into segments, one small red grapefruit (peeled, cut into segments) 1 cup arugula, 2 cups baby spinach, 1/2 red onion sliced. I make a lemon-orange vinaigrette dressing that is so easy. 3 tablespoons red wine vinegar, 2-1/4 tablespoons canola oil, 1/2 lemon-juice only, 2 tablespoons pure orange juice (concentrate), s & p to taste.

So delicious for lunch!

Orange Glazed Baked Cinnamon Acorn Squash

One Large Acorn Squash, remove stem and seeds, Slice and place inside a baking dish with 1-1/2 Pure Orange Juice (no pulp) sprinkle with cinnamon and cover with aluminum foil. Place into a pre heated 400 F oven and bake (undisturbed) for 35 minutes.

Serve and enjoy!

Lemon-Cherry-Mint Cooler

Easy anytime beverage I make this year round. Super easy and delicious. 2 cups fresh Cherry Juice (I use Juicy Juice brand) one lemon, juice only, ice cubes, sprig of fresh mint, serve.

Add cherry juice and lemon in a small carafe or pitcher, stir well pour over ice in a glass, add mint, sip and enjoy!

Love the combination.

Citrus Roasted (Or Grilled in Packets) Summer Veggies

These vegetables are such a treat in the warm months. I buy them fresh from my Produce Market. I use one lemon, one lime, one orange for just the juices, 2 tablespoons of honey, tad of white pepper and sea salt, drizzle of olive oil and mix veggies well, add to a non stick baking sheet pan and roast in the 375 F oven 30 minutes.

They will smell wonderful while roasting in the oven or grilling packets. I love zucchini, yellow banana squash, carrots, asparagus, cauliflower florets, red onion, large sliced red potatoes.

Any of your favorite veggies will do nicely and they’ll accompany any main meat option.

I think adding some citrus just enhances the natural flavors of any vegetable in my humble opinion.

Lemon-Orange Granita with Kiwi Slices

Making granita (flavored ice) is so much fun and so easy and delicious on a warm day! In a bowl add 3 cups crushed ice (you can use you blender to pulse ice cubes into ice chips), add juice of two lemons, 1 tablespoon honey, 1/4 cup pure Florida orange Juice and stir well, place in a shallow dish and put into the freezer after 1 hour and using a fork scrape the flavored ice and return to the freezer. The longer it sets up the better. Peel and slice kiwi fruit as garnish and enjoy!

Orange-Chocolate Cream Pie

Easy and delicious fun pie to make and eat! One chocolate graham cracker pre-made pie crust, 1/4 scant cup pure Florida Orange Juice, 1/2 cup heavy cream, 1/2 bar milk chocolate (6 ounces) melted, whipped cream topping.

In a stand mixer bowl add Orange juice and heavy cream on high run mixer until combined, slowly add milk chocolate as mixer runs on low once incorporated run mixer again on high, until fluffy and creamy. Transfer to the chocolate pie shell and refrigerate at least 2 hours before slicing and serving. Serve with whipped cream and enjoy!
