Cajun Baked Catfish with Lemon Rice

Have you ever tried Catfish? Baked? This is an easy, flavorful recipe we just love. I buy half dozen Catfish Fillets from my Seafood Market (ah so fresh!). Soak Fillets in whole milk with black pepper for 15 minutes. Spray a baking dish or use non stick, set oven temp. to 425 F – so far easy, right? In a small bowl add cajun seasoning (enough to coat top side of Catfish Fillets) and either Panko or seasoned bread crumbs, I add crushed almonds to ours. Place them in the baking dish (A single layer) and bake 10-12 minutes (they will flake when done). We love this with lemon rice (brown or white rice cooked with lemon zest and juice and garnish with fresh chopped parsley) and asparagus roasted in the oven tied with bacon ( asparagus bundles ). Most people enjoy Catfish breaded and fried as I do not fry many foods at all as you probably already know, this baking alternative is really very tasty and super easy. Garnish with lemon and herbs, if desired.

Catfish in our area as well as many other types of fish and Seafood in general is so reasonably priced and readily available. We as a family are very lucky to have such a fresh variety weekly to choose from.

  1. I used to make catfish all the time when I lived in Texas and Florida. I can’t remember the last time I cooked it here in Oregon as we have so many other fresh fish choices available! But this looks super yummy, CCC!
