Fruit Salsa with Homemade Cinnamon-Sugar Tortilla Chips

Delicious Fruit Salsa-a great palate cleanser! I love fresh fruit and this salsa is so easy to put together. I use kiwi, pineapple, mandarin oranges, watermelon, strawberries, pear, peach, lemon juice, refrigerate over-night. I make fresh cinnamon-sugar tortillas to dip into the salsa! It does not get any better than this!!!

For the cinnamon-sugar tortillas just cut flour tortillas in triangles, coat with honey (both sides-before cutting), mix in a ramekin 3 tablespoons granulated sugar, 1-1/2 teaspoon cinnamon sprinkle over both sides of tortillas, place on a non stick rimmed baking sheet pan and bake @400 F for 6 minutes. They will smell so good!

For the salsa, one kiwi-peeled-diced, 1/4 cup watermelon-diced (seedless), on peach-peeled-diced, 3 tablespoons mandarin oranges cut into pieces, one Anjou or Bartlett pear-peeled, cut into pieces, handful of fresh strawberries hulled, cut into pieces, 3 rings of fresh pineapple cut into pieces, one lemon juice only, 1/2 teaspoon sugar, mix well to coat fruit with fresh lemon juice (to reduce browning of fruit), cover tightly and refrigerate over-night. Stir before serving. NOTE: You may opt to add freshly chopped mint, 1/4 red onion diced finely, chopped cilantro, chopped parsley, if desired. Also wonderful alongside baked or grilled Tilapia, flounder, Cod, Halibut, swordfish steaks, tuna steaks, baked shrimp, seared scallops, a simple tuna salad sandwich-make it your own!

We love this and I make it weekly during the summer months.
