Zucchini & Carrot Spiral Salad with Citrus Vinaigrette

Great New summer Salad. We tried this at the Mother’s Day weekend celebration and everyone ooh and ah over it. 2 medium sized zucchini-spiralized, 3 carrots, rinsed-spiralized, one teaspoon garlic salt, one teaspoon white pepper, one lemon juice only, one lime juice only, 3 tablespoons Pure Orange Juice (no pulp) 2 tablespoons Canola oil, 2 tablespoon balsamic vinegar.

Add spiralized zucchini and carrots into a mixing bowl, add all other ingredients and stir well, cover and refrigerate 30 minutes before serving. Garnish with fresh finely chopped parsley.

Oh shoot, I was going to ask for a spiralizer for Mother’s Day, but when I decided to sign up for 5 weeks of Pure Barre in advance I told my hubby not to get me anything since the class was so much. LOL. OK I’ll just have to buckle down and buy one myself one of these days. The salad looks and sounds great, ccc! xoxo
