Lemon~Vinegar Pickles-easy recipe for homemade pickles. 2 cucumbers sliced, 1/4 cup white distilled vinegar, 1 cup water, 3 tablespoons sugar, 1 tablespoon peppercorns, 1-1/4 teaspoon sea salt, 1/2 white onion sliced thinly, 2 lemons juice only.

In a saucepan add vinegar, water, sugar, peppercorns, salt and cook on medium heat for 6 minutes. Remove from heat source and allow to cool. Once cooled add lemon juice, white onions and salt, stir well. Using two airtight containers (of your choice) or mason jars, divided the pickles and onion slices, fill with liquid. Refrigerate promptly. Use within two weeks. I usually let them chill a few days and then serve some with sandwiches.
