Great flavors in this easy, cold summer Salad. You’ll need 8 ounces of carrots, peeled and shredded, 1/4 scant cup golden raisins, 1/4 scant cup salted whole peanuts, 2 oranges for juice only, 1 cup plain yogurt. Add all ingredients into a large mixing bowl, stir gently and refrigerate covered until ready to serve.
Yum! Enjoy with any grilled meat option.
