Mini Lime Shrimp Appetizers

Such a fun appetizer for any get together. One pound Large Fresh Shrimp (Deveined, no shells), 3 limes-juice of one, cut wedges with the other two limes. Using 4″ wooden skewers (be sure to soak them in water first-for 15 minutes before grilling). Add in a ramekin salt, black pepper, one teaspoon Old Bay Seafood Seasoning, mix and sprinkle on each shrimp, skewer a lime wedge and add a Shrimp or two. Squeeze lime juice just before grilling over the skewered Shrimp.

These only take a few minutes to grill on each side. Enjoy, they are a favorite here!

Fruit Salsa with Homemade Cinnamon-Sugar Tortilla Chips

Delicious Fruit Salsa-a great palate cleanser! I love fresh fruit and this salsa is so easy to put together. I use kiwi, pineapple, mandarin oranges, watermelon, strawberries, pear, peach, lemon juice, refrigerate over-night. I make fresh cinnamon-sugar tortillas to dip into the salsa! It does not get any better than this!!!

For the cinnamon-sugar tortillas just cut flour tortillas in triangles, coat with honey (both sides-before cutting), mix in a ramekin 3 tablespoons granulated sugar, 1-1/2 teaspoon cinnamon sprinkle over both sides of tortillas, place on a non stick rimmed baking sheet pan and bake @400 F for 6 minutes. They will smell so good!

For the salsa, one kiwi-peeled-diced, 1/4 cup watermelon-diced (seedless), on peach-peeled-diced, 3 tablespoons mandarin oranges cut into pieces, one Anjou or Bartlett pear-peeled, cut into pieces, handful of fresh strawberries hulled, cut into pieces, 3 rings of fresh pineapple cut into pieces, one lemon juice only, 1/2 teaspoon sugar, mix well to coat fruit with fresh lemon juice (to reduce browning of fruit), cover tightly and refrigerate over-night. Stir before serving. NOTE: You may opt to add freshly chopped mint, 1/4 red onion diced finely, chopped cilantro, chopped parsley, if desired. Also wonderful alongside baked or grilled Tilapia, flounder, Cod, Halibut, swordfish steaks, tuna steaks, baked shrimp, seared scallops, a simple tuna salad sandwich-make it your own!

We love this and I make it weekly during the summer months.

Lemon~Berry Sweet Tea

Lemon~Berry Sweet Tea is so refreshing in the summer months. Easy to prepare and chill overnight! I use 4 family size Tea Bags, 3 lemons (juice only) 1/2 cup blackberries. Steep the tea for several minutes, remove tea bags and empty into a large pitcher, add lemon juice (from fresh lemons) stir well, add 1 cup granulated sugar, stir while warm. Add berries and refrigerate over-night.

Excellent flavors, serve in a tall glass over ice cubes and enjoy!

Grape & Lime Cooler

Refreshing summer drink using seedless green grapes. 1/2 cup halved green grapes, one fresh lime juice only, 1 cup Seltzer water, handful of ice cubes. In a blender add ice cubes and pulse several times, add grapes and pulse again, add lime juice and seltzer water and run blender one minute to well combine.

Pour into a glass, garnish with a few fresh grapes and enjoy!

Quick Citrus & Fresh Fruit Salsa

Top meat, taco’s, fish, any Seafood with this terrific and easy Salsa. 1/2 mango diced, 2 pineapple rings, cut into chunks, one peach, peeled diced, 1/2 lemon for juice only, 1/2 lime juice only. 2 tablespoons fresh chopped parsley, 1/4 white or yellow onion diced finely, dash of canola oil, dash of balsamic vinegar, one teaspoon sugar, mix together well, refrigerate covered until ready to use.

Easy and flavorful! Enjoy. We love this on baked Tilapia!

Zucchini & Carrot Spiral Salad with Citrus Vinaigrette

Great New summer Salad. We tried this at the Mother’s Day weekend celebration and everyone ooh and ah over it. 2 medium sized zucchini-spiralized, 3 carrots, rinsed-spiralized, one teaspoon garlic salt, one teaspoon white pepper, one lemon juice only, one lime juice only, 3 tablespoons Pure Orange Juice (no pulp) 2 tablespoons Canola oil, 2 tablespoon balsamic vinegar.

Add spiralized zucchini and carrots into a mixing bowl, add all other ingredients and stir well, cover and refrigerate 30 minutes before serving. Garnish with fresh finely chopped parsley.

Lemon~Vinegar Pickles

Lemon~Vinegar Pickles-easy recipe for homemade pickles. 2 cucumbers sliced, 1/4 cup white distilled vinegar, 1 cup water, 3 tablespoons sugar, 1 tablespoon peppercorns, 1-1/4 teaspoon sea salt, 1/2 white onion sliced thinly, 2 lemons juice only.

In a saucepan add vinegar, water, sugar, peppercorns, salt and cook on medium heat for 6 minutes. Remove from heat source and allow to cool. Once cooled add lemon juice, white onions and salt, stir well. Using two airtight containers (of your choice) or mason jars, divided the pickles and onion slices, fill with liquid. Refrigerate promptly. Use within two weeks. I usually let them chill a few days and then serve some with sandwiches.
