Super Fun appetizer for baked goods, fresh fruit I make this year round! 8 ounces softened cream cheese, one lime for juice only, 1/2 teaspoon almond extract, 3/4 cup toasted coconut flakes, one tablespoon coconut oil.
In a frying pan add coconut oil on medium/low heat and coconut flakes and toast lightly. Set aside to cool.
In a mixing bowl add cream cheese, lime juice, almond extract and stir, stir, stir with a sturdy spatula. Cover with plastic wrap and refrigerate 30 minutes. Remove cream cheese and roll into a ball and coat with lightly toasted coconut. Refrigerate until ready to serve. We love to dip whole strawberries, sugar cookie bars.
