Lemon Corn Bread Muffins

Corn Muffins in many forms are a staple in Southern Cooking. Citrus is delicious in corn bread especially in muffins! Many people buy the small box of Jiffy Mix, easy to make add an egg, milk, stir, add zest of one lemon and juice, stir gently then add to prepared muffin tin (greased or non-stick) fill 3/4 of muffin well, bake 8-10 minutes or until lightly golden brown.

Yes, it is just that simple! They are delicious for breakfast, snack or any time you are hungry for them. I always have some ready (different variety ones) and available in my home. They’re just as easy to make as cupcakes! You can prepare a glaze to frost the top of muffins or you canΒ use any jam, jelly.
