Lime-Ginger Vinaigrette——Serves 4——–Prep time 6 minutes
(1) 2-whole limes for zests and juices, 2 tablespoons of grated fresh ginger root, 1/4 teaspoon sea salt and black pepper, 3 tablespoons sesame oil, 2 tablespoons canola oil, 4 tablespoons rice vinegar. Whisk ingredients together well and store in an airtight container in the refrigerator. Absolutely, great on an Asian Salad!
(2) Key Lime Honeydew Melon Salad——-Serve 2——-Prep time 4 minutes
8 oz. bag mixed salad greens (rinsed and drained), 2 cups honeydew melon chunks, 2 whole limes for zests and juices, 1 tablespoon granulated sugar, 1/4 teaspoon sea salt (or Kosher salt) and black pepper, 2 tablespoons canola oil, 1 tablespoon vinegar (white or red wine is fine or cider vinegar). Mixed oil, vinegar, salt and pepper, lime zests and juices together in a small bowl, whisk ingredients well to combine. Add Lime dressing to mixed greens and honeydew melon salad and enjoy these flavors!
(3) Lime, Mint Lemonade Cooler——–Serves 4———Prep time 3 minutes
In a blender add 2-5 oz. can frozen lemonade concentrate, 3 cups H2O (cold water), zests and juices of 2 limes, turn on blender to low speed and run 2 minutes, add 2 mint leaves finely chopped and run blender on high one minute. Transfer to a Pitcher and refrigerate 1 hour before serving in tall glasses with Ice Cubes. Super easy and refreshing
(4) Simple Lime Butter——–Serves 4————Prep time 4 minutes
1 stick sweet cream butter softened, 2 limes for zests and juices, 1/2 tablespoon granulated sugar, in a small bowl add ingredients and stir well to combine with a spatula. Put in an airtight container and refrigerate. Great added on Shrimp before grilling! Saute Sea scallops using this simple delicious butter!

I actually like lime more than lemon although both are great. Your recipes using lines all sound so good. It is hard to find good limes here believe it or not, they tend to be on the dry side. I really love cooking with limes and have to try some of your recipes.

Tyr putting the lime in the microwave 15 seconds, then roll it with the palm of your hand before cutting open and squeezing the juice out Suzanne. Limes are smaller of course to lemons (Meyer or regular). Tip of the day for you my dear friend!

Anywhere I have gotten them they can be sad. It’s hot and miss sometimes I get good ones but it’s not consistent at all!
