Sesame Orange~Chicken

Who needs take-out make it at home. You’ll need two skinless/boneless chicken breasts cut into cubes, place into a bowl. Add one orange zest and juice, one tablespoon black pepper, 1 teaspoon garlic salt, one teaspoon corn starch, 2 tablespoons peanut oil for cooking .

In a small saucepan add 2 tablespoons of sesame seeds and on low heat lightly toast, set aside.

I always make a brown or white rice to accompany this dish. Follow package instructions, fluff with a fork before serving.

In  saute pan add peanut oil on medium high heat add seasoned chicken cubes and cook until no longer pink and juices run clear (about 8-10 minutes). In a small ramekin add one teaspoon honey, 3 tablespoons pure orange juice and stir well to mix, add into saute pan with cooked chicken, stir well and cook 2 additional minutes.

Ready to plate and serve, scoop some rice onto the plate and add orange chicken on top, garnish with a sprinkling of toasted sesame seeds. You can garnish also with finely diced green onions, if desired.

Strawberry Cream Pie with Lemon Zest

Fresh strawberries are so good! In the peak season I usually use fresh and then freeze several quarts. We love chilled desserts year round. For this recipe you’ll need 2 cups fresh strawberries (hulled, sliced) one tablespoon granulated sugar, one 9″ pie shell, one 1/2 lemon zest (reserve for juice), 1 cup heavy cream, 1/4 teaspoon pure vanilla extract, 2 tablespoons confectioners’ sugar. 

In a mixing bowl add heavy cream, vanilla, sugar, juice from 1/2 lemon and using a stand mixer or hand mixer cream together until soft peaks form, refrigerate.

In another mixing bowl add sliced strawberries, sugar and stir, poke several holes in pie shell with a fork and bake @ 375 F until golden brown. Allow to cool then add strawberries evenly across baked pie shell, add whipped cream on top, add the lemon zest, refrigerate until ready to serve.

Citrus Brine Jalapeno Peppers

I always have a jar of these in the refrigerator. Great in so many dishes. Easy to prepare too! I use 6 whole jalapenos cut off stem and slice in 1/8″ slices (remove as many seeds with your fingers as you want for heat level). In a saucepan on medium high heat add one cup water, 3 tablespoons sea salt, 1 tablespoon peppercorns, one lemon for zest and juice, one lime for zest and juice, one orange for zest and juice, stir and cook 4 minutes. Remove from heat and allow to cool.

Once mixture is cooled add sliced jalapeno slices and stir gently. Transfer to an airtight jar or container. Refrigerate until ready to use.

Love these on hamburgers grilled, tacos, so many uses.

Orange Marmalade~Pecan Crusted Salmon Fillets

We love Salmon and our Seafood Market locally has the very best available. I have reduced the recipe for YOU! 4- 6 ounce Salmon Fillets (skin on), 1 cup orange marmalade, 1/2 cup crushed pecans, 4 tablespoons (or a half stick of butter-melted). I usually grill these fillets but you can of course use your oven/broiler/grill or griddle pan.

In a small bowl add orange marmalade and melted butter stir well using a brush coat the Salmon Fillets well, then add pecans on top and grill (bake) away. I grill ours several minutes to thoroughly cook and leave a nice browning on the top!

Orange~Pineapple Protein Smoothie

Many of you know that I loveeeeeeeeeeeeeee smoothies (especially mid day) this one is sweet, creamy and delicious and a real favorite of mine.

One quarter cup Pineapple juice, 1/4 cup Whole Milk, 2 tablespoons Whey Protein Powder, one scoop frozen vanilla yogurt, 1/8 cup Pure Orange Juice (no pulp). Add all ingredients into a blender and run one minute to well combine.

Pour into a glass, sip and enjoy!

Wonderful Grilled Tuna Steaks-Do you Like Tuna Steaks?

I usually buy mine from my Seafood Market about 6-8 ounces each and 2″ thick they are reasonably priced. We love them grilled with a lime-chili butter. You can brush anything you like on them before grilling. Many times Tuna Steaks are served medium to medium rare-we tend to like them grilled a bit longer about 5-6 minutes each side on medium heat. I’ll let you decide the doneness to your liking!

I also have a recipe for Orange-chili butter that is great on Tuna Steaks as well. Simple recipe for either butters.

Lime-Chili Butter

1/2 stick lightly salted butter (softened), 1 tablespoon chili powder, one lime for zest and juice, mix well and coat both sides of Tuna steaks for grilling. The more basting with the butter the better!!!

Orange-Chili Butter

1/2 stick sweet cream butter (softened), 1 tablespoon chili powder, one Valencia Orange for zest and juice. Stir well to combine. Coat on Tuna Steaks with a brush and let them grill away.

Serve with rice, pasta, any vegetable side dish. We love Roasted Root Veggies, Rice & Scallion side dish with the Grilled Tuna Steaks.

Chili-Lime Roasted Peanuts

I had made these for the first time several years ago. I always have a lot of Company, family and friends and I try to have many types of munchies and appetizers available. I made a batch last night and they’re almost gone!!!

You’ll need 2-16 ounce jars of dry roasted peanuts. 2 limes for zest and juice, 1-1/2 teaspoons of chili powder, 1/2 teaspoon of smoked paprika, 2 tablespoons of peanut oil. Add all ingredients into a mixing bowl and stir well with a spatula to coat the peanuts. (They will smell very good!). On a 9×12 non stick (or prepared baking sheet pan sprayed with cooking spray) add coated peanuts in a single layer. Oven temperature set on 400 F roast for 8-10 minutes (turning once during cooking time).

Allow peanuts to cool down then serve. These are so easy and super flavorful! Enjoy!
