Baby Kale is such versatile veggie and a favorite in my household. This Bake is so easy and flavorful to prepare. Kale is wonderful in salads as well as a baked side dish. Packed with vitamins and fiber!
I use one pound fresh baby Kale. You will need one orange, one lemon, one lime for their zests and juices in a small bowl, one tablespoon honey, stir to mix. 1 cup low sodium vegetable stock. Using a 8″x 8″ baking dish add vegetable stock, and lay (rinsed and dried) Baby Kale inside, add all zests and juices of Citrus, cover with aluminum foil and bake at 375 F for 15 minutes.
