Some Wonderful Easy Recipes Using Lemons…

Lemons are so fragrant and probably most commonly used in all types of cooking. I have several favorite uses for Lemons as you may have as well.

(1) Lemon-Herb Butter 
In a mixing bowl add 1 stick (or 8 tablespoons) softened sweet cream butter, Zest the lemon and juice, add 1/4 teaspoon black pepper, 1/4 teaspoon onion powder, 1/4 teaspoon basil (fresh or ground), 1/2 teaspoon flat leaf parsley ( or parsley flakes), 1/4 teaspoon rosemary, stir with a wooden spoon to well combine. Add 2 pinches of nutmeg and using a spatula incorporate into ingredients. Pack Lemon-Herb Butter in an airtight container and refrigerate until ready to use. This butter is terrific on Seafood-Shrimp to be grilled, Sea Scallops, Tilapia, Flounder, Haddock, Pollock, White Perch, Cod, just about any Fish, Swordfish, Tuna Steaks.

(2) Lemon Cheese Dip 
In a mixing bowl add 1 cup softened cream cheese, 1/4 cup 1% Milk, 3/4 cup grated cheese ( your favorite),  Lemon zest and juice, 1/4 teaspoon black pepper. Hand stir with a spatula than transfer to using a hand mixer on low speed. Cream together ingredients for several minutes. Place in an airtight container and refrigerate until ready to use. This is excellent with freshly baked bread sticks, warmed tortilla chips, potato chips.

(3) Lemon-Ginger Sauce
In a mixing bowl add lemon zest and juice, 1/4 stick (2 Tablespoons) softened butter, 1 tablespoons freshly grated ginger root, 1/4 teaspoon black pepper. Mix together well with a spatula. Place in airtight container until ready to use. This is great on Shrimp to be grilled or sauteed, Sea Scallops, Tilapia, almost any type of mild white fish.
