Chili Lime Coconut Grilled Shrimp————Serves 2 ————-Prep/grill time 5 minutes
I have this easy recipe for Chili Lime Coconut Butter (posted on Tasty Kitchen.com) you’ll remember it from here. In a bowl add 1 stick of softened lightly salted butter, 1-1/2 teaspoons chili powder, 2 whole limes washed, zest and juices, 4 tablespoons (sweetened) coconut flakes. Stir all ingredients to combine well. I used just 8 ounces (1/2 pound) Jumbo shrimp (from my Seafood Market) you can make a full pound if desired or even use large shrimp instead of jumbo. That is all optional. I used the grill pan on medium high heat, brushed on the Chili Lime Coconut Butter on both sides of jumbo shrimp and grill 3 minutes each side (I usually coat shrimp again when I flip them over, that is optional). Oh my word they were scrumptious!!! I served brown rice pilaf with broccoli as side dishes. The meal was a winner!
The Lime and Chili Butter just bumped up the flavors of the Shrimp. I hope you all have a great day!
