A close counterpart to Sea Scallops are Bay scallops, typically smaller in size they can be very reasonably priced and if prepared well they are super flavorful. I will buy 3-4 pounds of these lil’ gems, saute them in lemon zest and juice and melted butter for just a few minutes. Transfer them into a prepared (8″X 8″ ) baking dish. Add 1/4 cup of grated parmesan and 1/4 cup of homemade seasoned bread crumbs (or use Panko) in a small bowl, mixed together then add evenly across the top of bay scallops. Set oven temperature to 400 F pop in the hot oven and bake 6-8 minutes.
These are great paired with a rice pilaf, side vegetable dish or super salad! I love to serve them with a lemon wedge or two on the side.
