Sub-Tropical Fruits – Pineapples

Pineapple-Coconut-Pancakes————-Serves 4————-Prep/Cook Time 6-7 minutes

Do you like pineapples? I have a easy, delicious recipe for Coconut Pineapple Pancakes, they’re a favorite! I use Hungry Jack pancake/waffle mix (why?) because it is economical and all you do is add water to the batter in a bowl and add whatever fruit you like in-its-easy…I use sweetened coconut flakes, crushed canned pineapple. Topped with Pineapple juice and whipped cream. Follow package directions for the desired amount of pancakes you are making, add in (strain a 5 ounce can of crushed pineapples) add the pineapples, reserve the juices in a small bowl. Fold in the pineapples, add 1/4 cup coconut flakes fold into the batter. Use a grill or greased griddle pan or just a large greased skillet to make your pancakes. In the bowl of pineapple reserved juices add 2 cups Cool whip topping and stir to combine.

I want you all to think you are on my Ocean Island sitting under a swaying beautiful Palm tree eating these gems! Add a stack of pancakes to an individual plate (use some butter in between if desired) add pineapple whipped topping and sit yourself down under that Palm tree and enjoy!!!

These really are a family favorite, light and fluffy and so scrumptious.
