Orange-Pepper-Honey Vinaigrette

Not only can you use this on a mixed green salad it works well as a glaze for Seafood. Shrimp, Scallops, Tuna Steaks, Swordfish, Tilapia, Flounder, Halibut any type you may enjoy!

You’ll need two Valencia Oranges-zests and juices, 1 teaspoon black pepper, 1/4 teaspoon sea salt, 2 tablespoons Pure Honey, 1 tablespoon Olive Oil, 1 tablespoon white distilled vinegar. Mix all ingredients in a blender and run 1-2 minutes. Transfer to a cruet or an airtight container and refrigerate until ready to use.

Shake well before using. We love this on grilled shrimp skewers!

Lemon-Honey Soy Dipping Sauce

We love this Lemon-Honey Soy Sauce on Shrimp or Sea scallops especially. Easy to make and store.

You’ll need 2 whole lemons (washed, zest and juice), 3 tablespoons Low sodium Soy Sauce, 1 tablespoon brown sugar, 1 teaspoon grated ginger root, 1 tablespoon honey. Mix all ingredients together (in a bowl) whisk well. Cover and refrigerate until ready to use. I have even using this as a basting sauce to grill Seafood including Shrimp, Sea Scallops (my favorite!).

You can serve warm as an easy dipping sauce too! Enjoy.

Ginger-Orange Butter

Great flavors with multiple uses. We love this on Baked Flounder or Tilapia.

1-1/4 stick sweet cream butter (softened), 1 tablespoon grated ginger root, 2 Valencia oranges (zest one orange but juice both), mix, mix, mix with a sturdy spoon. Place in an airtight container (pack it in) refrigerate until ready to use.

I’ll bet you can find a few uses for this simple flavorful butter! Have fun with it…

Some Wonderful Easy Recipes Using Lemons…

Lemons are so fragrant and probably most commonly used in all types of cooking. I have several favorite uses for Lemons as you may have as well.

(1) Lemon-Herb Butter 
In a mixing bowl add 1 stick (or 8 tablespoons) softened sweet cream butter, Zest the lemon and juice, add 1/4 teaspoon black pepper, 1/4 teaspoon onion powder, 1/4 teaspoon basil (fresh or ground), 1/2 teaspoon flat leaf parsley ( or parsley flakes), 1/4 teaspoon rosemary, stir with a wooden spoon to well combine. Add 2 pinches of nutmeg and using a spatula incorporate into ingredients. Pack Lemon-Herb Butter in an airtight container and refrigerate until ready to use. This butter is terrific on Seafood-Shrimp to be grilled, Sea Scallops, Tilapia, Flounder, Haddock, Pollock, White Perch, Cod, just about any Fish, Swordfish, Tuna Steaks.

(2) Lemon Cheese Dip 
In a mixing bowl add 1 cup softened cream cheese, 1/4 cup 1% Milk, 3/4 cup grated cheese ( your favorite),  Lemon zest and juice, 1/4 teaspoon black pepper. Hand stir with a spatula than transfer to using a hand mixer on low speed. Cream together ingredients for several minutes. Place in an airtight container and refrigerate until ready to use. This is excellent with freshly baked bread sticks, warmed tortilla chips, potato chips.

(3) Lemon-Ginger Sauce
In a mixing bowl add lemon zest and juice, 1/4 stick (2 Tablespoons) softened butter, 1 tablespoons freshly grated ginger root, 1/4 teaspoon black pepper. Mix together well with a spatula. Place in airtight container until ready to use. This is great on Shrimp to be grilled or sauteed, Sea Scallops, Tilapia, almost any type of mild white fish.

Apricot Cream Smoothie

Anytime means smoothies!!! This one is so delicious!

You’ll need 1 cup Pure apricot nectar juice, 1/2 cup frozen vanilla yogurt, 2 pinches nutmeg and cinnamon, run blender 1-2 minutes then pour into a chilled glass.

So creamy! Yum.

Lemon-Lime Baked Ham

Ham is so flavorful when you use a lemon-lime soda in baking! If using a slow cooker add a 2 liter bottle of soda (7-up, or Sierra Mist), 1 can 6 ounce pineapple chunks, 1 teaspoon cinnamon, 1/2 teaspoon allspice. Cook for 4 hours on medium. I use a shoulder bone in Ham about 7-8 pounds. It becomes super tender and flavorful. I make this year round. The family loves it. Easy!!!

We also love sweet potatoes, corn casserole, green bean casserole among several dishes I prepare. If you are looking for a different recipe for Ham give this a try I think you’ll love it as we do!
