Ah, Florida oranges they are the best. This is a fun recipe to make and even more fun to eat!
Orange-Glazed Salmon Fillets ———— Serves 1-2—————Prep/grill time 5-8 minutes
You’ll need 2 Salmon Fillets (or if serving yourself-just one) about 4-6 ounces each. I like to buy mine fresh from the Seafood Market but you can use frozen (thaw first). In a mixing bowl add 2 washed Valencia oranges for zest and juices, 1/2 teaspoon black pepper, 2 tablespoons melted butter (I use sweet cream butter), 1/2 teaspoon smoked paprika, 1/2 teaspoon parsley flakes, mix together well. Add 3 tablespoons orange marmalade (jelly) into the mixture. Using a brush coat the salmon fillets well. I use an outside grill – you can use an inside grill or griddle pan on medium high heat-coat the surface first with your favorite cooking spray. I lay mine skin side down. After several minutes grilling (about 4 minutes) flip the Salmon Fillet(s) carefully and coat again with the brush and mixing bowl glaze. Continue grilling to your desired doneness. If your fillets do not have skin on just coat each side with mixing bowl ingredients with a brush (The more glaze the better!) while grilling. Microwave the remaining mixing bowl ingredients and use a spoon to drizzle over grilled Salmon when serving. This is so flavorful and easy to prepare. We love it with rice and broccoli as side dishes.
