Lemon Avocado Cream Salad Dressing

This salad dressing is so delicious and we recently had it on a super salad!

You’ll need 2 Ripe Avocados (I use Haas) cut each in half, remove pit, scoop out flesh on each and add into a mixing bowl. Add 1 teaspoon salt, 1 lemon for zest and juice, stir the mixture (mashed it up), add 1/2 cup Lemon Oikos Greek Yogurt, 1/4 cup whole milk (or you can use half and half), using a hand mixer on low cream ingredients together. Add 1/2 teaspoons black pepper, optional. It’ll have a great consistency. Store in a jar or airtight container, place in the refrigerator until ready to serve. When ready to serve remember to shake well.
