Trio of Citrus (orange, lemon, lime) Buttercream Frosting!

I love to make a plain sugar cookie (kinda large in diameter) and use a great recipe with all three citrus fruits.

Citrus Trio Buttercream Frosting/Icing——–Serve 12——–Prep time 5-6 minutes

Two Valencia Oranges (washed) zest and juices, one lemon (washed) zest and juice, two limes (washed) zest and juices in a large mixing bowl. 5 cups powdered sugar, 2 tablespoon granulated sugar, 1 stick sweet cream butter (softened), 1/4 teaspoon lemon juice concentrate, you can use a hand mixer or stand mixer but slowly add in Confectioners’ sugar (or you’ll be wearing it, HeHe), cream all ingredients together. It will smell awesome and the consistency will be silky and super creamy.

Make a batch of simple sugar cookies, put a generous serving of Trio of Citrus Buttercream Frosting/Icing on them and sit back and enjoy a few! I am telling you; it is just outrageously delicious!!!

My family goes wild over these. Mom loves to use this recipe on a white sheet pan cake. That is awful good too, I will have to admit. (AH, the original recipe is mine not Mom’s). We trade off recipes and thoughts all the time. We create, tweak, cook, bake and eat then decide which are the winners! I love to share recipes. I hope this is one you will enjoy!

Lemon-Lime Pomegranate Punch

Great flavors in this punch that is fun for a large gathering at a BBQ! If you do not have a punch bowl you can simply use 2 Pitchers. This delicious punch will easily serve 12.

64 fluid ounces Lemon-Lime Soda (I use either 7-up or Sierra Mist soda), 48 fluid ounces Pure Pomegranate juice, 3 limes for zest and juice of two limes, the third lime just cut into slices.

In a punch bowl (or Pitchers) add pomegranate juice and (2) lime zest and juice, stir gently. Cover with plastic wrap and refrigerate one hour. Be sure to also refrigerate the lemon-lime soda.

When ready to serve, add chilled lemon-lime soda, stir gently, add ice cubes and you are ready!

It you happen to want to spike this be sure no children are close by!!! We have it as non-alcoholic.

Summer Strawberry-Lemon Butter

We love pancakes and waffles (french toast, too) in our household this strawberry-lemon butter is so delicious along with homemade strawberry syrup!

You’ll need one quart fresh strawberries hulled, diced and placed in a mixing bowl, the juice from 2 fresh lemons and their zests, 1/4 cup granulated sugar and one stick of softened butter. Get in the bowl with a potato smasher and take out the day’s frustrations, smash away! Using a sturdy spatula stir well to combine and pack into an airtight container and refrigerate until ready to serve.

Orange-Mango Salsa

This has now become one of my favorite Salsas! So refreshing to use with Chicken or Seafood.

You’ll need 2 fresh ripen mango that you will peel, pit and diced. 2 Navel Oranges, remove fruit in sections (in between membranes cut into each side and the orange will fall out), diced, I only used zest from one orange. Diced small red onion, 1 small Jalapeno (remove seeds, stem) diced finely, salt and pepper to taste, drizzle of olive oil and one tablespoon aged balsamic vinegar. Mix all ingredients together. Cover with plastic wrap and place in the refrigerator to chill.

I used this salsa with seared sea scallops and of my it was scrumptious! I have used it with baked and grilled chicken also. It just adds a little extra flavor to the dish.

Wings anyone?

Are you a chicken wing fan? Citrus Baked Chicken Wings are scrumptious!

Citrus Wings ———-Serves —4 ———–Prep/Bake Time——–45 minutes — 375 F

I will use 4-5 pounds of wings and typically without the tips on. One orange, one lemon, one lime. I will wash each first before I zest the citrus. In a 9 x 12 baking dish add chicken wings, 1-1/4 cup low sodium chicken stock, 1/2 cup water, salt and black pepper add to all the little wings, add onion powder, garlic, if desired (I am personally allergic to garlic in any form however, most sweet and savory citrus dishes can use garlic in minced form, powdered form or whole cloves-I will let that decision up to your taste). Add 1 teaspoon paprika, 1 teaspoon chili powder and sprinkle over the citrus wings. Wings are great on a weekend just hanging out. They work just as well on a week-night. Add the zest of all three citrus (Lemon, Lime, Orange) over the wings, cut citrus in half. Juice one half of each orange, lemon, lime over the chicken wings. Save the other half of orange, lemon, lime to slice and lay slices of orange, lemon, lime on top of wings. Place in a 375 F Oven for 35-45 minutes depending on the size and how crispy you want the citrus wings. I usually cover the baking dish with foil the first 20 minutes of bake time then remove foil. Easy recipe and frankly super duper flavorful! They are so good. If you want a dip you can use a ranch dressing, add celery sticks, carrot sticks on the side of a serving platter.

You’ll need plenty of napkins too. I hope you will give these a try; you might be surprised how easy and delicious they are.
