Seafood…Wonderful Sea Scallops!!!

Lemon-Pepper Seasoned Seared Sea Scallops———-Serves 4—————–Prep/cook time 4-5 minutes

I have a simple, easy recipe to sear Sea Scallops using lemons to share with YOU today. I buy mine Fresh from the Seafood Market but you can use Frozen Sea Scallops. You’ll need 16 ounces (one pound) to serve 4 the prep and cooking time is a matter of minutes. I use my grill pan for these. You can use a hot skillet. You’ll need 2 whole lemons washed, zest and juices, 1/4 stick of melted butter in a mixing bowl add 1 teaspoon black pepper, stir lemon juices, zest and pepper together. Add the Sea Scallops (gently now) and coat them in the mixture. Add to heated grill pan and sear a few minutes each side. These are so easy, so flavorful and one of my absolute favorites!

We like to serve these Sea Scallops with brown rice and roasted asparagus but you choose whatever sides you might prefer. A mixed salad, baked potato. So many choices.

Limes, some easy recipes for You!!!

Limes are a wonderful citrus so I have included some recipes for your perusal. I hope you enjoy!

(1) Lime Sweet Tea (Better than Arizona Brand! hehe) Serves 4 Prep time 4-5 minutes

2 limes (washed, zests and juices, 4 cups Water, 4 single bag Tea Bags (Your choice I use Tetley Tea), 1/2 cup granulated sugar. When water comes to a boil add tea bags (shut off stove top) and let tea bags steep several minutes. In a pitcher add lime zests and juices, granulated sugar. Remove tea bags and Pour contents into Pitcher, stir well. Refrigerate 1 hour before serving in tall glasses with Ice Cubes. Sit back and enjoy!

(2) Lime chili Butter Serve 4 Prep time 3-4 minutes

1 stick sweet cream butter, 2 whole limes (washed, zests and juices), 1 tablespoon chili powder, mix all ingredients together with a spatula, pack it in an airtight container and refrigerate until ready to use.
I just recently, used this on Grilled Tuna Steaks. I just brush some Lime-chili butter on both sides and grilled. It was fabulous!

(3) Spicy Lime Ground Turkey Chili Serves 4 Prep/cook time Slow cooker-2 hours

One pound Lean Ground Turkey, one yellow onion diced finely, 2 whole limes (washed, zests and juices), 1/4 teaspoon cumin, 1/2 teaspoon black pepper, 2 tablespoons chili powder, 2 cups low sodium vegetable stock, 1- 15 oz. can diced tomatoes, beans are optional ( 1-2/15 oz. cans black beans or your choice of beans). I made this with no beans the last time. Brown lean ground turkey meat in a skillet for 5-6 minutes transfer to slow cooker (crock pot) with a slotted spoon, add all ingredients and stir well. Place lid on, set temperature to medium and let it cook 2 hours. Serve with crusty bread, croutons, crackers. The flavors are so delicious. Hope you enjoy.
