There is a flowing abundance of Redfish in our area. It is a mild fish that can be prepared in several different ways. The most well-known is Baked with capers and seasonings. I use old bay seasoning (1-1/4 teaspoons) using two 6 ounce pieces of Redfish about 1-1/2″ thick. Add 2 tablespoons of capers and juice, 2 tablespoons of butter (melted). Salt and black pepper to taste, parsley (add some cooking spray) in a 8″ x 8″ prepared baking dish and bake @ 375 F for 8-10 minutes.
For the lemon cream sauce: Two lemons for zest and juices (in a small saucepan) 1/2 cup light cream, 1/2 teaspoon corn starch, 1 tablespoon granulated sugar, stir and cook on low heat 5-7 minutes stirring while simmering. It will thicken up a bit and just ladle some lemon cream sauce over the Redfish after baking. We love this with a baked potato/sour cream and chives, side vegetable.
