Pineapple~Blueberry~Banana Relish

Using fresh fruits in Relishes alongside a grilled/baked chicken or some grilled Seafood is so refreshing and delicious! I happened to have had some canned pineapple chunks, fresh blueberries, banana and put this together in 5 minutes, let it chill one hour and served it with grilled chicken. It was a winner!

You’ll need 1 cup fresh blueberries, 1/2 cup pineapple chunks with natural juices-(from a can), 1/2 ripe banana diced, 1/2 teaspoon lemon juice concentrate~sweetened, 1/4 red onion diced, 2 tablespoons canola oil, 1 teaspoon red wine vinegar, pinch of salt, pepper, stir, cover and chill. Garnish with any herb you like, cilantro, fresh basil, parsley.
