Citrus Baked Turkey Loaf!

Using leftovers from Thanksgiving is something I enjoy! Last year I came up with this easy, delicious recipe using leftover turkey meat (can be dark or white meat, either or both).

You’ll need 2 cups cubed turkey meat, 1 cup Panko (or plain bread crumbs), one small yellow onion diced finely, 1 large beaten egg, 2 tablespoons fresh ground parsley, 1 teaspoon sage, one lemon zest and juice, 1 cup low sodium Chicken broth (or stock). Combine all ingredients (except broth) in a large mixing bowl. Prepare a 8″x 8″ baking dish. Set oven to 400 F. Pat out a loaf from the mixing bowl ingredients and add to baking dish, add chicken stock/broth, cover with aluminum foil and bake 15 minutes.

Pairs well with a side of cranberry sauce, leftover sweet potatoes, mashed potatoes and gravy.

Stuff the Turkey with Citrus!!!

I love using lemons, limes, oranges in the turkey cavity! So aromatic! I am making 2-20 pound Turkey’s this Thanksgiving and one is definitely getting stuffed with citrus fruits! The more the merrier.

We have 32 people family and friends joining us this Thanksgiving and I just Love that! I am also making a Spiral Ham. Loads of side dishes, pies, cakes, etc.

With the citrus in the Turkey cavity I will also add 2 – onions quartered, 2-stalks of celery. Butter the under side of Turkey Breasts Skin. Add salt and pepper and zests from all citrus. Using a large roaster in the oven for roasting bliss! Truly the aromas while it is baking is wonderful! I also cook Turkey (and Ham) on Christmas Day!
