In South Florida near the Everglades and into The Florida Keys “Gator” is popular. Now, it is the Gator Tail cut into long 2-3″ strips that is battered and fried. I am not a fan of frying any foods and do not fry often at all. To properly eat Gator tail it has to be fried! Why are you turning your nose up? Well, I did that exact same thing years ago when I tried it for the first time. It of course had a nice Citrus lemon cream dipping sauce to accompany it. I have never made it at home but my Seafood Market will sell fresh Gator if requested.
Any type of batter will work and it is suggested to use Peanut Oil to fry it in. The “Gator” uncooked feels a bit rubbery to me but when battered and fried it is tender. Go Figure? So you may not ever wish to try Gator but you now have some information on it!!!
